Somen
Salad
Ingredients
- 2 pkgs
somen noodles (cooked, rinsed and drained)
- 1/2
lb. char siu pork or fishcake (kamaboko) julienne-cut
- 1/2 head
iceberg lettuce, shredded
- 1
pc. cucumber peeled and julienne cut
- 3 stalks
green onion chopped (saimin style)
- 2 eggs
cooked scrambled and slice thinly
Dressing
- 3/4 cup
Japanese vinegar
- 3/4 cup
soy sauce
- 3/4 cup
sugar
- 1 tsp
sesame oil
- 1 tst
toasted sesame seeds
Prepare
dressing a day before serving. Mix all dressing ingredients together
and refrigerate overnight to bring out flavor.
Lay somen
noodles evenly in a 9 x 13 inch pan. Add layer of lettuce, followed
by the cucumbers and finish with the green onions. Garnish with
your meat and eggs. Shake dressing well and pour evenly over the
somen salad. Serve immediately.
